Our small flock of ducks will lay one egg per duck almost every day during the spring, summer and fall season. During the winter the laying will slow down, or even stop, as the drop in daylight signals their system to focus on surviving the winter rather than developing eggs. Duck eggs are prized by chefs and bakers as their large, rich yolk is extremely tasty and makes baked goods super fluffy!
Our goose will lay two dozen or so eggs in the late winter/early spring and then will stop for the remainder of the season. Goose eggs are quite large, around three times the size of a chicken egg, and are great served as a “one egg omelet”!
